Our story
Back in 2019 in Paris, two friends, Charles and Victor, opened a brasserie together - the kind of place Parisians disappear into for a 3-hour lunch.
They called it La Nouvelle Garde: a promise to eat and drink the French way, done properly, 100% homemade, cooked from scratch from the highest quality seasonal ingredients.
They served classic French dishes prepared with care, generosity and excellence in beautiful, relaxed spaces full of energy.
Guests loved it!
So they opened another one, and then another one. And 9 brasseries later, it was finally time to bring it to London.
In July 2026, in Sloane Square, Brasserie Olivia was born.

The role
As HR Manager, you’ll be the first dedicated HR hire for the Nouvelle Garde group in London, with the opportunity to shape how we support our people from the very beginning.
Working closely with the management team, you’ll own the day-to-day people function, with recruitment as a key priority alongside onboarding, employee relations and manager development.
This is a hands-on role for someone who wants to stay close to the operation, understand what the team needs and build simple, effective ways of working that can grow with us. You’ll also work closely with our HR team in France as we build the foundations for future growth in London.
What success looks like
You’ll lead recruitment and help us attract and hire great people.
You’ll create a smooth onboarding experience and support employees throughout their journey with us.
You’ll advise and support managers on day-to-day people matters and employee relations.
You’ll coach managers so they feel confident handling people issues and developing their teams.
You’ll keep HR systems, records and administration accurate and up to date.
You’ll stay close to the team, spot issues early and help strengthen the culture of the restaurant.
You’ll help build simple HR processes that can grow with the business.
What you'll bring
At least 3 years’ HR experience within hospitality, ideally after starting your career in restaurant operations.
Strong hands-on experience across the employee lifecycle, from recruitment and onboarding through to employee relations and offboarding.
A good understanding of UK employment practices and ACAS guidance.
A builder mindset: you’re curious, ask questions and look for better ways of doing things rather than simply following existing processes.
The creativity to imagine what could work better and the drive to turn those ideas into practical solutions.
You communicate with confidence, handle sensitive situations professionally and approach people's challenges with empathy and common sense.
You enjoy creating structure and building ways of working that make life easier for everyone
Speaking French would be a bonus
What we offer
Annual salary of £50,000–£55,000 (Mon - Fr)
